The It-Vegetable of the Summer Is Here

While the official song of the summer is still up for debate – we’ll let Sabrina Carpenter and Billie Eilish sort that out on their own – we’re officially ready to name cabbage the it-vegetable of summer 2024.  

Nutritious, versatile, and frankly super underrated, the big brother to everyone’s favorite fried and glazed veggie, the Brussels sprout, can really do it all. While the misunderstood vegetable can at times get a bad rap when prepared poorly (seriously, please stop steaming your cabbage!), the total number of heads farmed has continued to increase since 2020 as more and more professional and home cooks alike discover its health benefits and learn how good cabbage can be when cooked correctly.

While this is great news for whichever member of your extended family likes to tote their “famous” coleslaw recipe at every barbecue, we think the move is to go grilled with your cabbage instead to get some of that smokey char. Drizzle something creamy and/or acidic over the top and you might just be crowned the new cabbage king or queen in your family.
